  2. Lightly flour a work surface, fold dough over itself twice, then shape into a ball. Rest for 15 minutes.
  3. Place seam side down on two layers of floured cotton towels. Let rise for 2 hours until doubled in size.
  4. Preheat a Dutch oven with its lid at 450°F for 30 minutes.
  5. Carefully transfer dough into the pot, cover, and bake for 30 minutes. Remove the lid and bake another 15–30 minutes until golden and crusty.
  6. Cool completely before slicing and serving.
